Brewed in collaboration with the iconic Victoria theatre company, Atomic Vaudeville for their Halloween 2024 Cabaret “Crone-O-Phobia.” This lightly smoked lager is made with all german grains, oak smoked wheat and beech smoked barley. Just a hint of black cardamom was cracked into the tank to round out the slight smokiness.

We took a pretty traditional english brown ale recipe and put a little spin on it. Sam from 2% Jazz hooked us up with his Hudson Espresso beans and some Cacao husk. Along with some milk sugar for a bit of sweetness and body, we think this beer is the best part of waking up!

There is a lot in a small package. Brewed with all citra hops then a dry hopping of Cryo Citra, this low ABV beer still packs in all the flavour of citrus, grapefruit and tropical fruit.
We love making beer with our friends, especially when it's Mitch and Ben from Dageraad. For this dark rich holiday treat we used rolled oats, chocolate wheat and Special B malts fermented with belgian yeast. This gives the beer its distinctive rich, spice cake quality. Once fermented we let it rest on a good dose of organic cacao nibs for something sure to warm your soul on these colder, cozier winter nights.

Our latest addition to our award Gold Medal winning Bay series of West Coast IPAs. This time a huge dry hopping of Mosaic and strata bring tropical and stone fruit aromas, along with cannabis and citrus.
A flavour-packed journey. We mash hopped with Cascade hops for tropical thiol aromas, dry hopped with Motueka hops from New Zealand for fresh citrus, and infused Pineapple Express Cannabis Terpene. The result? A dank, resinous beer with juicy pineapple and guava. All the aroma, none of the smoke.
Weyermann malts give this beer its distinct breadiness and dry cracker aromas while Germany’s Tettnanger and Halertau Mittelfruh hops bring floral and grassy hoppy notes. Thanks for your help with this one, Vera!
We used one of our classic West Coast hoppy beer malt bills and substituted Flaked and Malted Rye where we could. On top of this we layered Simcoe, Hallertau Blanc, Citra and El Dorado hops to bring herbal, tropical and citrusy noted to this slightly spicy rye beer.
A dry hopped version of our British Invasion ESB. Citra and Hallertau Blanc hops bring herbal and citrus notes to this otherwise malt forward ESB
We hit this fairly traditional pilsner with a dose of Crystal hops. These hops are a daughter of Germany’s Hallertau Mittelfruh and bring floral notes of chamomile and cedar that balance out the biscuity maltiness of this beer.
Our second release in our Dankster series. This American style IPA uses all “C” class hops. Citra and columbus were used in the boil, followed by a huge dry hopping of Chinook, Cascade and Centennial. The result is a dank and piney IPA with notes of citus. All balanced by malty sweetness from 100% Field Five Pale Malt.

We are very excited to release this beer we created with Gareth Gaudin the creator of Perogy Cat and the owner of Downtown Victoria’s Legends Comics & Books. Field Field Five Pilsner malt with Hallertau Blanc hops provide the backbone of this beer with the addition of lemongrass. Add a cool fermentation and you get a crisp herbal, grassy beer with a lemony brightness.

This traditionally crafted ESB is brewed with Maris Otter and ESB Pale malt to give you an amber brown colour with an off-white/beige head. The malt gives you fruit leather, caramel and dark berry. This is balanced by the earthy and herbal characteristics of Fuggles Hops. Lower carbonation gives this medium bodied beer a full mouthfeel and a pleasant lasting finish.

Based on our Jacked Lemon Blonde Ale we brewed when we first opened in December of 2020. This time we’ve paired orange zest with the tropical and coconutty Sabro hop and some lactose to keep the mouthfeel soft.
This lager pours with a rich golden hue, slight haze and a white head. Malt forward on the nose with a slight nuttiness from the Bohemian Floor Malted Pilsner malts from Weyermann in Bamberg Germany. More hops on the palate giving white pepper spice with a soft herbal quality. Medium bodied with a pleasant clean finish.
Copper coloured with an amber hue from the grape contact. Aromas of strawberry candy and straw. Dry grape juice and more strawberry on the palate that finished with a mild lingering acidity. This fades into long lasting mixed berry flavours. Higher carbonation has this beer dancing across your mouth!
Pours hazy orange with a white head. Tangerine, guava, mango and papaya jump out of the glass. Citra, El Dorado and Mosaic hops give this beer its tropical punch/5 Alive quality. A longer and cooler fermentation with a lager yeast gives this beer a cleaner and crisper finish.

Not your standard Milk Stout. We used a diverse malt bill in this beer to give a BIG dark malt presence. This balances out the sweetness from the lactose but still leaves you the smooth creamy mouthfeel you want from a stout this style
This beer pours amber gold with a fluffy white head. Citrus notes are first to hit followed by pine. The upfront bitterness is well balanced by the malt and gives way to candied watermelon and fresh naval orange peel. A soft mouthfeel leaves you with a long, pleasant finish.

Appearance: A deep gold with a slight haze with a bright white head. Aroma: A balance of bready malts and floral lime zest from the hops, with a touch of WC dank. Flavour: Following pretty closely to the lime zest, malts and danks. Mouthfeel: Light, crisp with a bit of a bite.
A super fun multigrain malt bill brings complexity to this saison. We used barley, wheat, oat, buckwheat AND triticale to provide a complex and pleasing base. We fermented with a blend of saison and wine yeasts to promote biotransformation. What is biotransformation? It’s when yeast metabolizes inert compounds into delightfully aromatic compounds.

Flavour: The malty backbone holding up to the delicate flavours in the tea with a refreshing and slightly tart finish. Mouthfeel: Light, tart, crisp.

Pours a deep reddish brown with a beige dense head. On the nose lots of caramel and toffee from the malt. The hops give floral, subtle baking spice and earthy undertones of tobacco leaves. Flavouful caramel malts, herbaceousearthy rind and light spicy finish.
Pours a deep copper with slight haze topped with a bright white head. On the nose malt forward or caramels and sweet berry and peppery grapefruit, grassy straw, dank and some wild tones. Flavor is followed by sweet candy orange, zesty citrus and grassy hay. It’s semi-dry resulting in a long finish with a hint of bitterness.

Deep malty richness on the nose from the roasted Barley and Chocolate Wheat bring a bit of nuttiness. Whole Smoked Beech Malt bring subtle smokiness with a bit of vanilla. All balanced by Tettnanger and Saphir hops. A clean crisp finish from a long cold fermentation on kolsch yeast with a bit of deep honey.
This is the first sour we have brewed on our system! Pours a hazy yellow with a well balanced acidity. A dry hopping of El Dorado, Citra and Lotus brings tropical fruit and orange creamsicle qualities. Bring on Patio Season!
Pours hazy yellow with a light tan head. Citrusy florals, lychee, lime zest, grape, and white peach balanced with resin and danky notes. Leaning more towards the sturdy malt backbone with bread and wheaty flavours followed by floral, citrus zest, mango, and a resony finish. Medium to light body, smooth with a slight warming from the ABV
Pours a bright hazy yellow with a pillowy head. On the nose banana upfront followed by pear and white pepper. Pallet following what the nose brings and finishing with coriander and ginger. Perceived sweeter but is relatively dry from the diastatic yeast. Crisp and refreshing but also complex.
A lighter approach to our line of hazy lagers. This beer was designed to be crushable. Soft mouth feel compliments a maltier finish with subtle fruit tones from a dry hopping of Azacca Hops.
The latest in our Off the Clock line of single hop Session Ales. This time we have Ekuanot on the main stage. Eukuanot are known for their herbal and grassy characteristics along with citrus and melon like fruitiness.
Pours a hazy yellow with a bright white head. Fruity nose of citrus, stone and tropical fruit and subtle oaky undertones and a touch of bubblegum. The english yeast gives berry esters to play with the fruity hops. Flavors of tropical fruit, melon and an oaky dry finish from the hops and warming finish from the yeast.

A smoothie inspired sour which we added a super fun 200lbs of blueberries to. The funnest amount of fruit added to any beer we’ve ever made! We’ve also added a nice heap of vanilla and lactose for sweetness and body, so sadly this beer won’t be as fun for our lactose intolerant and vegan friends :(

The latest in our Off the Clock line of single hop Session Ales. This time we have Ekuanot on the main stage. Eukuanot are known for their herbal and grassy characteristics along with citrus and melon like fruitiness.
The malt bill on this porter gives soft chocolate notes, rich body and soft mouth feel with just a little sweetness, balanced by spice from the custom blended Chai Tea from Earth’s Herbal who have been creating organic herb products locally since 1992.
A lighter approach to our line of hazy lagers. This beer was designed to be crushable. Soft mouth feel compliments a maltier finish with subtle fruit tones from a dry hopping of Azacca Hops.

The name gives a clue to the dry hopping we used in this beer. Ella, the sister hop of Galaxy, brings floral and tropical notes. We accentuated this by adding Vic Secret and Galaxy hops to the dry hopping. The result is a tropical fruit forward hazy lager with a clean finish.

This beer pours a hazy golden. Fruit and citrus on the nose. Belma hops give a grapefuity and earthy notes with Amarillo and Citra hops bringing brighter tropical flavours. Proceeds from the sale of this beer go to the Victoria Sexual Assault Centre.
The 3rd installment in our Off the Clock single hop session series. This time with Mosaic hops front row, center. Mosaic hops are fairly new to the brewing scene. Originally bred in 2012 from Simcoe hops, Mosaics are packed full of citrus, floral and piney notes. They’re considered a dual-purpose hop for bittering and aroma. We used mosaic in the boil to add a soft bitterness to balance the malt and then dry hopped with Cryo Mosaic to bring out those bright berry-like aromas.

This stout spent 5 months conditioning in stainless steel before making its way over to a serving tank. A thick and viscous mouthfeel and inviting complexity. This beer really opens up as it gets warmer. Savour it, drink it slow.

Our latest hazy lager showcases oat with rolled oats making up 20% of the malt bill. This is our first time using New Zealand's Pacific Sunrise hops which bring tropical notes paired with a smooth mouthfeel from the oats. A cold fermentation makes this a clean, crisp and crushable beer.
Light copper colour and a full off-white head are the first things you’ll notice about our 3rd West Coast IPA. A dry hopping of Centennial, Simcoe, Citra and Cryo Cascades bring bright and nectary citrus aromas. A pillowy, malty mouthfeel and a long soft bitter finish will have you craving another.
The second of our hazy, hop forward lagers. A soft mouth feel from wheat malt and rolled gives way to a clean finish from the slow and cold fermentation. This is our first time using Cryo Pop hops from Yakima Chief Hops. Their Original Bend is a blended hop pellet that brings huge tropical, citrus and stone fruit notes. This hop Never Stops Never Stopping.
This deceptively strong saison is given the name Quatre for the 4 months it spent conditioning in stainless after its primary French Saison fermentation. We used Bohemian Floor Malted Pilsner malts for a rich body and smooth mouth feel. This brings notes of honey and an earthiness that pairs well with the spice from the yeast and the loral hops. It then gives way to a pleasant lemony finish. This beer begs to be paired with middle eastern spice.
Vienna malt from Bamberg paired with German Tettnanger hops result in this well balanced and crushable beer. Lagered at 1 degree for three weeks, this beer pours with a bit of unfiltered turbidity, dense head retention and an alluring light copper glow.

Fruit aromas come from a generous dry hopping of Motueka, Citra and Nelson Sauvin. The spelt lends a soft mouthfeel that plays well with the juiciness of the hops and gives way to a clean and crisp finish from lagering.
This brown means business! It pours dark brown with a creamy brown head. The well structured malt bill brings aromas of dark chocolate, hazelnut, dark caramel, and toasted sesame. Eventually a lingering piney bitterness from a dry hopping of centennials breaks through and slowly softens over the course of its lengthy finish. If dinner plans are pork belly ramen, this beer is a must!
A cold and long fermentation left this beer tasting clean, crisp and well balanced with the Motueka whirlpool hops. After fermentation we raised the temperature and added first a dry hopping of Waimea Hops from New Zealand then another of Citra Cryo. The result is a rich golden coloured beer, like peach cobbler in a glass. Bright and citrusy alongside notes of white fruit.
A distinctively different interpretation from our other Saison, this beer presents with more of the classic Belgian style aromas of banana and bubblegum. The rye plays with the peppery esters of the Saison yeast and adds a bit of spice.
New Zealand’s Rakau hops and North American Citra hops are the front runners of this zesty and tropical lager. They pair well with the smooth mouthfeel you get from the rye. A slow and cold fermentation makes this beer a wonderfully dry clean drinking hop forward lager, with a ton of haze that is absolutely crushable on a warm Victoria summer day! !
The lovely citrus aroma from the Amarillo hops play very well with the delicate malt bill. Wheat adds just the right mouthfeel to keep this beer flavourful and interesting at its lower ABV. This porter is a mouthful with grains coming from the UK, Germany and Belgium. This is our new take on the classic English style. Nine different grains mashed together to bring you robust aromas of coffee and dark chocolate. The head is rich and dark. The perfect beer to tuck into on a winter day.
Beer #3 in our Haze IPA series. Once again we head to the southern Hemisphere with a dry hopping of Galaxy and Eclipse Hops. Notes of passion fruit, citrus and peach. No adjuncts were used to make this haze, just great ingredients and solid brewing practices. A surefire way to beat those winter blues!
Our second West Coast IPA. Dry hoppings of El Dorado and Ekuanot hops add layers of stone fruit and lemon over the classic pine.
Our New World Oat Saison is delicately hopped with Citra and infused with fresh lime and orange zest during the boil to add delicious layers of complexity to our Saison Yeast. To finish this beer we dry hopped with Rakau from New-Zealand. Expect a dry, citrusy, fruity and aromatic delight!
Coming from the east, JB, our brewer, was excited to brew a classic West Coast style IPA for those who would truly appreciate it (specifically, in this case, Mike). And appreciate it we do! A healthy does of Centennial, Simcoe, Amarillo, and Citra hops along with a massive dry hopping of Simcoe and Idaho 7 give this IPA its piney citrusy aroma. We’re thirsty!
Our Multigrain IPA is brewed with carefully selected Barley, Spelt, Rye, Wheat and Oats. This unique recipe is generously hopped in the boil with Amarillo, Simcoe and Centennial, then dry hopped with Citra and a wisp of Amarillo to deliver a rich piney and yellow fruits bouquet.
The southern passion brings juicy melon and guava notes where azacca comes in strong with the tropical notes like pineapple and mango. The beer, if poured properly is a rich beautiful golden yellow
Our first Hazy IPA is crafted with premium quality Canadian and U.K. malts. A massive whirlpool hopping of juicy Citra along with a double dry hop of the intriguing Sabro varietal will have you drifting on a cloud! Expect coconut and tropical flavours, all of that with a pillowy mouthfeel. P.S. this beer is brewed with only water, malt, hops, mineral salts and yeast. Oats add great mouthfeel to this well hopped pale ale. An assertive hopping with Citra Hops in the boil and then nothing but Cryo Mosaic in the dry hopping. A nice splash of citrus followed by a pleasant piney bitterness. It will have you ordering a second!
This West Coast Pale Ale is crafted with Canadian, Germans and U.K. malts along with the citrusy Centennial and floral Cascade Hops. As all of ours recipes, we adjusted the brewing water with several minerals salts to enhance the mouthfeel, the flavour and to be faithful to brewing tradition. Expect a wonderful balance between the malt backbone, the bitterness and the bright hop flavour! It’s the first beer we brewed at Herald Street Brew Works and trust us, it was a Long Time Coming… .
Cashmere and Citra hops play well with the lemon peel that was added after the boil. Wheat and Malted Oats lend a creamy mouthfeel that just becomes more rounded out with just a touch of lactos sugar. A bit of residual sweetness results in a delicious but not over powering lemon candy flavour.
